I am currently having an obsession with making these cookies. They are worth a possible increase in booty size. Honestly.
Butterscotch Pecan Sandies
Recipe found on the back of the Guittard butterscotch chips bag.
3 cups unsifted all-purpose flour
1/2 teaspoon baking soda
1 and 1/3 cup unsalted butter, softened
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla
1 large egg
3/4 cup chopped pecans
2 cups butterscotch chips (Guittard)
Preheat oven to 375.
Cream butter, sugar, salt and vanilla in mixer on medium speed until light. Beat in egg until fluffy. Reduce speed to low, add baking soda and flour (one cup at a time) until combined. Stir in pecans and butterscotch chips.
Form in to small round balls and place on cookie sheet. Flatten balls with the bottom of a glass to about 1/4 inch high. Bake for 8-10 minutes or until they begin to brown around the edges (but not too much) Tops should remain pale. Cool on rack, store in an airtight container.

I made these this week! The recipe makes a LOT. But that's a good thing. Tasty little buggers!
THat is so funny! I love them, but I love butterscotch too. The Guittard chips are a great price at Winco right now, huh?! I never really noticed how much it made, just noticed that when they were gone I wanted more.
